Vegetables cook faster if you chop them into smaller chunks, use just enough water to cover, use the smallest pan possible for the quantity, and cover with a lid.You can also use a steamer to cook several vegetables on the same ring - they taste better too. Only use the oven for cooking lots of food at the same time - you can freeze any you don't need that day. Or use a microwave - it's much quicker and more economical to use for smaller quantities.
